Recipe Amelander mustard soup
On the Amelander fields where seagulls screech overhead, mustard seed has been sown and grown for decades.
A large team of volunteers harvest these seeds after which the mill in Hollum grinds them into the, we all know, mustard.
And the tastiest mustard soup? You make it with this delicious Amelander Mustard, of course! No idea how to make mustard soup? Then use the recipe from Corn- and mustard mill De Verwachting:

Ingredients for 4 people:
- 3 tablespoons Amelander Mustard
- 1 shallot
- 1 clove of garlic
- 1/2 litre chicken stock
- 1/2 litre cooking cream
- dash of white wine (tip: Pearl of Ameland)
- freshly milled white pepper
- Wadden Sea salt

Filling of your choice:
- Amelander catfish
- Amelander dry sausage
- Smoked salmon
- Fried bacon
- Finely chopped leek rings
- Prawns
Preparation
Chop the shallot and squeeze the garlic clove. Heat oil in a soup pan and fry the onion and garlic until translucent.
Then add the mustard to the pan and stir it with a wooden spoon over the bottom of the pan to allow it to de-acidify.
Deglaze the mustard with the white wine and add the stock and cream while stirring.
Let the soup simmer gently for 5 minutes.
Finally, add the stuffing and season with salt and pepper if necessary.
If desired, you can bind the soup a little more.
